'Tis the season for pumpkin! Our kids love pumpkin whether it's our homemade pumpkin bread or our homemade pumpkin pie crunch dog treats. This year, I got a little creative with our original homemade peanut butter meatball treats. I added pumpkin. Yep. Total deliciousness.
I'm not going to bore you with dozens of paragraphs before sharing the recipe.
Here it is...
1 cup of regular peanut butter
3 eggs
1/3 cup of plain mashed pumpkin
4 cups of flour
2 teaspoons baking powder
1/2 - 1 cup of warm water
Combine peanut butter, eggs, and pumpkin. Add flour and baking powder. Mix well. Add warm water 1/2 cup at a time.
Mix until the dough is not too sticky or dry.
Roll into balls a little smaller than a golf ball.
Bake on a nonstick cookie sheet at 350 for about 19 minutes. Baking time will vary depending on your oven.
