Our Annual St. Patrick's Day Dinner Was Rather Fabulous


There are a few meals throughout the year that we only make and eat once a year. That includes Thanksgiving Dinner, Christmas Dinner, St. Patrick's Day Dinner, and Easter Dinner. For those meals, we go all out. Down home cooking. Traditional fare. We make enough to feed an army. Today, we made our annual St. Patrick's Day dinner.

I've always made a St. Patrick's Day dinner for Lisa, but for the past 4 years, this annual dinner has been extra special because a couple of our favorite humans have joined us.

This year, we had it a day early. We made the traditional corned beef brisket with onions, carrots, and cabbage. We also whipped up lots of mashed potatoes and homemade bread with butter and the fresh strawberry jam that I made earlier in the week.

For dessert...

My homemade lemon meringue pie.

I haven't made this in years because it's a bit time consuming and making homemade lemon curd is tedious.

But, we got up early.

I grated fresh lemon peel. Always extra because we all love anything lemon to be extra lemony.

Lisa juiced the lemons.

The pies were cooling before 11 a.m. An hour later, I put them in the fridge to chill for the rest of the day.

Yes, I said pies.

One for us. One for C & B...our neighbor friends who have become family.

Our kids got to enjoy some of the fare with their dinner.

Shortly before 6, dinner was ready.

We all dove in and ate with gusto.

Had seconds.

It was an absolutely wonderful dinner and evening.

I adore these annual meals.
