Homemade Blueberry Cupcakes With Fresh Buttercream Frosting


On Thursday we celebrated Sophie's 2 Year Gotcha Day. In this house, when we celebrate Gotcha Days, I make cupcakes. These cupcakes are delicious and made to please both the human and pup palate. The ingredients are pup friendly pending your pup doesn't have any food allergies. This time around, Sophie wanted homemade blueberry cupcakes with fresh made buttercream frosting.

I have to back up just a tiny bit. A few years ago, I was attempting to create a recipe for a super moist (I really hate that word) fresh fruit cupcake without using my homemade fruit compotes. I wanted a cupcake batter that I could fold fresh fruit into and, once baked, have a moist (ugh..hate that word) cupcake.  At some point, the light bulb went off. Why not combine my cupcake recipe with my muffin recipe. After a few tries, I nailed it.

This recipe, once baked, can be eaten as is if you want a muffin or topped with buttercream frosting for a luscious cupcake.

In a mixer or bowl cream together 1 stick of soft (almost melted) butter, 1 cup of sugar, and 1 1/4 cup sour cream (you can substitute plain Greek yogurt). Mix in 2 eggs.

To that, mix in 2 1/4 cups flour, 1 teaspoon baking powder, 1 teaspoon baking soda and 1 teaspoon cinnamon (optional).

In a separate bowl, you want to combine 2 cups fresh blueberries and 2 tablespoons of flour. If you're using frozen blueberries, be sure to thaw and drain before adding flour.

Fold in blueberries.

Fill each lined muffin tin 3/4 of the way with batter.

Bake at 350 for about 20 minutes. The time may vary depending on your oven.

Once done, the cupcakes will spring back if you gently press the center. Or use a toothpick. Poke the center. If the toothpick comes out clean, they're done.

Let cool.

For the frosting, cream together 1 stick of softened butter, 1 teaspoon of real vanilla, and 4 cups of confectioners sugar. Add a tablespoon or two of milk until you get the consistency of a whipped frosting.

Frost and garnish the cupcakes. I used our Bodacious Biscuit Love Peanut Butter Dog Treat Recipe to make the biscuits.
