A Year Ago, This Would Not Have Happened

 

This was my big project on Thursday. Making festive Easter bags filled with my homemade chocolate chip cookies that I baked in the afternoon. And I added a little Easter candy too. These were handed out yesterday to some hardworking essential employees. I honestly love doing this. Especially now. There is a reason for that.

In late March of 2020, our state was pretty much shut down because of the COVID-19 pandemic. You couldn't find toilet paper. The grocery store shelves were 'bout near empty. 

Planning meals for a week for Lisa and me was almost impossible because of that.

Almost a year ago, I published a blog column about getting excited over toilet paper and packets of yeast. 

It was a struggle to find eggs and boneless chicken breasts and flour and most of the other ingredients to make meals and treats for our kids. 

For the longest time, the baking aisle at the grocery store was almost bare.

Thankfully, a few friends came through for us during that time. They found flour and eggs and other essential ingredients. 

Because of that, we were always fully stocked with ingredients to make meals and treats for our kids.

We got through those difficult few months. 

When I was making the cookies Thursday afternoon, I couldn't help but think, "A year ago this would not be happening."

I found myself feeling exceptionally grateful that this year, I could.

And, that made it all the more enjoyable.
