Here's The Recipe For My Apple Cupcakes With Vanilla Buttercream Frosting


For Lobo's Gotcha Day, I made homemade apple cupcakes with vanilla buttercream frosting. That's what he wanted. In this household, I don't make separate "pupcakes." Instead, I make cupcakes that are both human and pup friendly. In other words, they're scrumptious to the human and pup palate. That includes the homemade doggy biscuit on top of the cupcake.

After posting the photo of Lobo's Gotcha Day cupcakes, several people reached out asking for the recipe. Well, here it is!

To start, peel and core 2 medium apples. Dice. In a bowl, toss the diced apples with 1 tablespoon of flour and 1 teaspoon of cinnamon. Put aside.

In a mixer or bowl, add the following...

1 stick softened butter
1 cup sugar
2 eggs
1 1/2 cups sour cream or Greek yogurt
1 tsp vanilla
1 tsp cinnamon

Mix really well until smooth.

To that, add...

2 1/4 cups flour
1 teaspoon baking powder
1 teaspoon baking soda

Mix well.

Remember that bowl of diced apples you put aside? Fold those into the mixture. Bake as you would any cupcake at 350 for about 20-22 minutes. Baking times will vary depending on your oven.

For the frosting, cream together 1 stick of softened butter, 1 teaspoon of vanilla, and 4 - 4 1/2 cups of confectioners sugar. If needed, add a tablespoon or two of milk until you get the consistency of a whipped frosting.

I use a piping bag to frost the cupcakes, but you can use a Ziploc style bag or use a knife and do it the old-fashioned way.

After I frosted the cupcakes I sprinkled on a little cinnamon sugar mix. To finish, I added a mini Bodacious Bodacious Biscuit Love Peanut Butter Dog Treat. The recipe for those are right here.
