This Summer Berry Crunch Pie Is One Of Our Favorites


'Tis the season for...fresh berries. We eat 'em plain and the kids love the berries in their raw fruit and veggie medley. However, fresh berries have a very short "fresh" life and when there's too many, I like to freeze them for homemade berry bread and use some to make a berry crunch pie. Aside from homemade pumpkin pie, this is our other favorite. And, it's both pup and human friendly. Our kids love getting nibbles of this fresh summer pie.

For the pie crust, use your favorite recipe or a store bought version. The filling is simply 3-4 cups fresh berries (it all depends on the size of your pie plate), 2 tablespoons flour, and sugar. I don't specify the amount of sugar because some people like their filling super sweet. Others, like us, prefer less sugar, more berry taste. Mix the berries, flour, and sugar gently. Pour into pie crust.

The topping is 1 stick of melted butter, 3/4 cup brown sugar, 3/4 cup flour, 1/2 cup plain oats, and 1 teaspoon of cinnamon. Mix all ingredients together. Spread evenly over berry mixture.

Bake at 350 for about 40 minutes. The time may vary depending on your oven. You'll know when it's done because the filling will be a little bubbly and the crunch topping turns golden brown.

Allow to cool. You can top with vanilla ice cream, whipped topping, or it's just as good plain.
