Our Bodacious Pumpkin Cupcakes Recipe


Earlier this week I made mention of having a Human & Pup Friendly Recipes tab. You can read about the inspiration behind that here. Over the past few days I've collected photos of my homemade muffins, cupcakes, bread, etc. It was difficult to decide which to post first, however, at the last minute I came across a photo of my pumpkin cupcakes. This is my go-to recipe. Our kids love it. I've brought these cupcakes to gatherings and both humans and pups have gobbled 'em.

Where this is the first Human & Pup Friendly Recipe we're adding, I want to mention that I hate it when I go to a recipe blog and there's paragraph after paragraph before the actual recipe. I won't do that to you. 

In a bowl or mixer combine...

1 1/4 cup plain mashed pumpkin (I just use the entire can)
2 eggs
3/4 cup sugar
1/4 cup brown sugar
1/4 cup milk
1/2 cup vegetable oil

Mix well.

Add...

1 1/2 cups flour
3 teaspoons cinnamon
1 teaspoon baking powder
1/2 teaspoon baking soda

Mix well.

Fill muffin tins and bake at 350 for about 20-25 minutes. Every oven is different so I don't like to peg down a definite time. You'll know when they're done. Stick a toothpick in if you're unsure.


For the frosting...

1/2 block of cream cheese at room temperature
1/2 stick of butter at room temperature (use real butter, please)
4 cups confectioners sugar
1-2 tablespoon cold milk

Mix. If the frosting is too dry, add milk slowly while beating on high. The frosting should be light and fluffy. Not too stuff. Not too runny.

Frost cupcakes or use a piping bag.

For the decorations, I use our homemade peanut butter dog biscuits. Those are both human and pup friendly as well.
