Bodacious Banana Crunch Biscuit Recipe


These Bodacious Banana Crunch Biscuits are out of this world and the kids love them! I love munchin' on them too. I just have to do it when the kids aren't looking or after they've got to bed. If I'm busted, I get THE LOOK. The kids stare at me as if to say, "Ah, Mom. Those are our biscuits. Why are you eating them?"



In a mixer or bowl, combine 1 cup Skippy Natural Peanut Butter, 2 cups of flour, 1/2 cup plain oats, 3 teaspoons baking powder, 1/2 cup chopped dehydrated bananas, 1 - 1 1/4 cups of hot water, and 1 teaspoon cinnamon. Mix well.


The dough should NOT be sticky. Flour your counter. Roll a little less than 1/4 inches thick.


Use the cookie cutter of your choice. You'll have to press down a little hard because of the dehydrated bananas.


Bake for 22 minutes at 350. Your oven may vary. You want the biscuits to be a nice golden brown.


The biscuits will not be crunchy, even when cooled. You have to let them sit for 24-48 hours to achieve the crunchy texture. Or, you can serve as is for a more soft baked biscuit.

Your biscuits will last up to a month or longer if you keep them in an airtight container. Yes, you can freeze these crunchy gems.
