One of my favorite Summer treats is garden fresh tomatoes. Those will always hold a special place in my heart. I remember my Grampie's gardens. Bursting with fresh-grown tomatoes. After spending an afternoon harvesting them, we would enjoy tomato sandwiches for lunch with fresh cucumber slices.
This Summer, we scored some fresh tomatoes from the Farmer's Market. Lots of varieties. We ate a lot. Plain. As is.
However.
I wanted to make something special with the remainder.
Confession time.
I have been an avid baker for over 40 years. But. I do not make homemade puff pastry. I really should try my hand at making it. But I have not.
Yet.
In the past, I have made hundreds of tomato pies with homemade pie crusts. It is honestly one of my favorite meals.
But.
Lisa is not a big fan of pie crust.
We had a sheet of store-bought puff pastry in the freezer.
Need I say more?
I introduced Lisa to my homemade rustic tomato and cheese puff pastry. Lots of fresh tomatoes. Cheese. Herbs. Garlic.
It was love at first bit for Lisa.
We licked up every crumb.
This will definitely be a new and frequent staple in our home during the Summer months.
